Cocoa butter is a naturally occurring and rich plant-based fat found in cacao beans. The more cocoa butter you have in your chocolate bar or baking discs, the easier it melts. Chocolate has a melting point between 86 and 90 degrees Fahrenheit. Since it melts lower than your body temperature, it will quickly dissolve in your hand or pocket. The low melting point is another reason you may notice melting if you store your chocolate in a warm room or keep it in the car for even a short period.

  • Refrigerate sparingly: We don’t usually recommend putting chocolate in the refrigerator or freezer. When chilled in the fridge, your confections will quickly change in flavor or consistency. However, there are exceptions to this rule. For example, if your air conditioner breaks and your chocolate is at risk of melting, you can always wrap it in tin foil. Once it’s in its foil wrapper, store it inside an airtight container.
