S’mores Ice Cream

S'mores Ice Cream in a bowl garnished with graham cracker crumbles

Yield: 1½ Quarts

INGREDIENTS
Chocolate Ice Cream Base
½ cup TCHO Natural Unsweetened Cocoa Powder
3 cups half + half
1 cup heavy cream
6 large egg yolks
1 cup sugar
½ vanilla bean, split in half
Dash of salt

Assembly
4 graham crackers, broken up
½ bar TCHO 70% Dark Chocolate from Ghana (or about 1 oz of TCHO 66% Bittersweet Dark Chocolate)
4 oz mini marshmallows 

DIRECTIONS
Chocolate Ice Cream Base

  1. In a medium saucepan on medium heat, add the cocoa powder, 1 cup of the half-and-half, and heavy cream.
  2. Scrape the vanilla beans off the inside of the pod using the back of a paring knife and add them to the saucepan.  Whisk together. 
  3. Bring the mixture to a simmer, then remove from heat.
  4. In a large bowl, or standing mixer, whip the egg yolks until they turn into a pale yellow color.  Add gradually the sugar and continue to whip until the mixture is fluffy.
  5. Temper the cream mixture by slowly pouring the hot liquid down the edge of the bowl with the egg and sugar mixture, whisking constantly.
  6. Once combined, strain the mixture back into the saucepan and cook over low heat until the mixture starts to thicken, stirring frequently with a rubber spatula. You should be able to wipe a clean line on the back of your spatula without the liquid running down (roughly 170-175oF). Strain again. 
  7. Pour the mixture into a clean bowl and let sit at room temperature for 30 minutes. Once the mixture cools down, cover and place in the fridge overnight.

Assembly

  1. Pour the chilled mixture into an ice cream maker and let churn (follow instructions for your ice cream maker regarding timing), may take about 20-25 minutes.
  2. Once the ice cream is frozen and fluffy, fold-in the graham cracker pieces, marshmallows, and chopped up chocolate.
  3. Place into a freezer-safe container and freeze for 3-4 hours before serving. 
  4. Scoop into a bowl or a cone (or right into your mouth...) and garnish with some crumbled graham crackers and mini marshmallows.  Enjoy!
