Directions

  1. In the bowl of a stand mixer fitteed with a paddle attachment, combine flour, baking powder, salt, and sugars.
  2. In a seperate bowl, use an immersion blender to combine molasses, oil, and 3.42 kilograms water until smooth. 
  3. Pour wet mixture into dry mixture and mix until combined. 
  4. Fold in chocolate.
  5. Portion into desired size, then transfer to a silpat-lined sheet tray. 
  6. Refrigerate until chilled.
  7. Heat oven to 325*F. 
  8. Bake Cookies to desired doneness.
